Is Frozen Seafood Actually Fresher Than “Fresh”?

The short answer is yes. Properly handled seafood that is frozen soon after harvest can be fresher and higher quality than “fresh” seafood that has spent days travelling through a conventional supply chain.

The real question is not simply whether seafood is fresh or frozen.

It is:

  • Who caught it?
  • How was it handled?
  • How quickly was it preserved?
  • How many hands did it pass through?
  • When in its journey was it frozen?

Freshness is not a label. It is a timeline.

The Myth That “Fresh” Always Means Better

“fresh” actually means in the seafood industry.

That may sound blunt, but consumers who automatically choose fresh over frozen are often paying more for fish that is lower quality than carefully handled, properly frozen seafood.

The biggest misconception about frozen seafood is that freezing automatically makes it inferior. It doesn’t.

Poor handling makes seafood inferior. Long supply chains make it inferior. Allowing fish to deteriorate for days before finally freezing it makes it inferior. Freezing it slowly in a household freezer can also damage its texture.

But none of those things are inherent to frozen seafood.

Flash freezing does not make seafood less fresh.

It preserves the freshness it already has.

Freshness Begins the Moment the Fish Leaves the Water

Seafood begins changing as soon as it is harvested. From that moment forward, handling, temperature, time, and processing all affect its eventual quality.

That is why a better indicator of seafood quality is its directness of access to the resource: how close the supply chain remains to the person who caught it and how quickly the seafood was cared for and preserved.

Here is what that can look like in practice:

Recently, my husband Shaun and our sons travelled to Port Alberni to fish for sockeye salmon.

They drove over with insulated totes and plenty of ice, untied the fishing boat from the dock, and headed to the fishing grounds. They anchored and slept on the boat overnight so they would be ready when the fishing area opened early the next morning.

When the opening began, they set a gill net. A gill net sits vertically in the water like a fence. Floats hold the top of the net near the surface, while a weighted lead line holds the bottom down. The mesh is sized for the target salmon species.

As the net came back aboard, they removed each sockeye by hand and placed it immediately into a slurry of ice and seawater. By the end of the fishing day, the salmon were transferred into iced totes in the truck and driven directly back to Vancouver. Within approximately 12 to 24 hours of being caught, the fish were processed, vacuum-sealed, and flash-frozen. At that point, we had preserved their catch-day freshness.

Compare that with a fish moving through a conventional supply chain. It may spend time aboard a vessel, at an auction, in a processing facility, on loading docks, in distribution centres, in trucks, in warehouses, and finally in a grocery-store display.

It may still be labelled “fresh.” But the label does not tell you when it was caught or what happened along the way.

What Does Flash Freezing Actually Do?

“Flash freezing” is often used casually, and there is no single universal rule stating that a fish must freeze within a precise number of minutes to use the term.

International quick-freezing standards focus instead on the process: the seafood must move rapidly through the temperature range where most ice crystals form, and the centre of the product must ultimately reach −18°C or colder.[1]

Why does speed matter?

Fish tissue contains water. When fish freezes slowly, larger ice crystals can form. Those crystals can disrupt the structure of the muscle tissue, contributing to moisture loss and a softer or mushier texture once the fish is thawed.

Rapid freezing generally creates smaller ice crystals and limits damage.[2] This is why putting an aging piece of fish into a household freezer is not the same as professionally freezing seafood shortly after harvest.

One freezes a product that may already be deteriorating, often relatively slowly. The other preserves a carefully handled fish close to the beginning of its freshness timeline.

A Freshness Timeline

Consider two salmon caught on the same morning.

Salmon A: Preserved Near the Source

  • Caught in the morning
  • Removed from the net by hand
  • Immediately chilled in an ice-and-seawater slurry
  • Transported directly for processing
  • Cut, vacuum-sealed, and flash-frozen within a day
  • Kept frozen until the household is ready to eat it

Salmon B: Sold as “Fresh”

  • Caught in the morning
  • Stored and landed
  • Sold to a buyer
  • Moved to a processor
  • Shipped to a distributor
  • Sent to a retailer
  • Displayed on ice
  • Purchased days later
  • Stored in the household refrigerator before cooking

Which one is truly fresher?

The frozen salmon has had its quality-preservation clock slowed near the beginning of the journey.

The never-frozen salmon has continued aging the entire time.

An Ecotrust study described fresh seafood in global-industrial supply chains as sometimes sitting on retail shelves eight days or more after travelling long distances. Its blind consumer testing compared flash-frozen coho salmon and sablefish from small-scale fishing businesses with fresh-never-frozen fish bought from high-end grocery stores. Across the attributes measured, the flash-frozen fish was rated either more favourably or statistically the same as the fresh fish.[3]

In the case of sablefish, consumers preferred the frozen samples in every category except appearance, where there was no statistically significant difference.[3]

So, yes, frozen seafood can actually be fresher than “fresh.”

What About Previously Frozen Fish at the Seafood Counter?

Seafood presented in a retail display may also have been frozen and thawed before sale.

That is not necessarily a problem. Properly frozen and thawed seafood can be excellent.

The problem is that consumers often use the word “fresh” to mean “never frozen,” even though the two ideas are not interchangeable. In Canada, previously frozen fish that has been thawed before retail sale is subject to specific labelling requirements. But labels still cannot tell the whole quality story.

A previously frozen fish could have been:

  • frozen promptly at excellent quality, or
  • frozen days after moving through a supply chain.

Again, the decisive issue is not just whether it was frozen. It is when, how, and at what quality it was frozen.

Frozen Seafood Lets Us Eat Seasonally All Year

Wild seafood is one of the last truly wild proteins available at meaningful scale. That means it is seasonal, following the cycles of nature.

Different species can only be harvested in particular places, under particular conditions, and during particular openings. We cannot simply produce more wild fish whenever consumers want it.

Proper freezing allows us to preserve seafood when it is naturally available and at its best. Wild Arctic char is a good example. Most Arctic char found in conventional grocery stores is farmed. Wild Arctic char harvested in Nunavut is only available during particular seasonal conditions. By preserving it properly after harvest, Canadians can enjoy this truly seasonal wild food throughout the year.

Frozen seafood is not less seasonal than fresh seafood. In some ways, it is more honest about seasonality. It allows us to harvest responsibly when abundance and fishing conditions permit, preserve that food at its peak, and eat it over time.

Freezing Can Also Support Harvesters

There is a justice dimension to seafood preservation.

When harvesters must sell a highly perishable catch immediately, they are limited to whichever buyers have the infrastructure, capital, and transportation available at that moment. That can leave harvesters with very little negotiating power. Freezing gives seafood time.

It can allow small-scale harvesters to reach markets farther from the dock, aggregate products responsibly, sell throughout the year, and connect with customers who value quality, traceability, and the people behind the catch. Instead of racing against spoilage, harvesters have more opportunity to find an appropriate market for the food they have produced.

Freezing does not only preserve fish. It can preserve options.

Frozen Seafood Reduces Waste

Fresh seafood has a very short household life. Government food-safety guidance generally recommends using raw refrigerated seafood within one or two days of purchase.[5] That leaves little room for changed dinner plans.

Perhaps you buy fish intending to cook it that evening, but plans shift. You eat out, work late, or decide to make something else. Suddenly, an expensive and resource-intensive wild food risks ending up in the garbage. Frozen seafood can remain safely stored until you are ready to use it, although quality will eventually decline during very long storage.[5]

Freezing also reduces pressure elsewhere in the supply chain. Ecotrust reported that 23% of seafood at supermarkets did not make it to the dinner plate, identifying greater acceptance of high-quality frozen fish as one potential way to reduce that waste.[3]

For consumers, harvesters, and the ocean, seafood fulfilling its destiny as dinner is a much better outcome than seafood being discarded.

Is There Any Time When Fresh Is Better?

If you are standing at the dock and a harvester has just returned with seafood caught that day, eating it fresh can be extraordinary. That is a special and wonderful experience. But that is very different from assuming that anything sitting under glass at a grocery store must be better because it says “fresh.” For most Canadians, most of the time, properly frozen seafood offers more consistency and may preserve quality better than fish that has spent days on ice. 

Even products people rarely associate with freezing can challenge expectations. Chef Kate Rice has become an enthusiastic advocate for our flash-frozen oysters. She calls them “miraculous self-shucking oysters” because freezing causes the shells to release, making them easier to open. She values their quality, convenience, reduced waste, and lower staff time. “Every restaurant, caterer, and food service business should be using frozen oysters. They save time, money, reduce waste, and consistently produce a superior experience for guests.”

At a recent tasting, consumers repeatedly told us that the flash-frozen oysters were every bit as good as, and in some cases better than, the live oysters they expected to prefer.

How to Choose High-Quality Seafood

Instead of asking only, “Is it fresh or frozen?” ask:

  1. Who caught or harvested it?
  2. Where was it harvested?
  3. How was it handled after harvest?
  4. How quickly was it chilled or frozen?
  5. How many businesses handled it before it reached me?
  6. Was it frozen near the beginning or near the end of its freshness timeline?
  7. Can the seller provide traceability back to the source?

Those questions reveal far more about seafood quality than the word “fresh” alone.

So, Is Frozen Seafood Actually Fresher Than Fresh?

It certainly can be.

Fresh-never-frozen seafood eaten immediately after harvest can be exceptional. But seafood that has travelled for days under a “fresh” label is not automatically higher quality than seafood frozen promptly and professionally near its source.

Freshness is not defined by avoiding the freezer. It is defined by time, temperature, care, preservation, and directness.

The best seafood isn't necessarily the seafood that was never frozen. It's the seafood that has the most direct connection to the source, was handled with care, and was preserved at its peak.
