This simple marinade pairs perfectly with any of the wild sustainably caught salmon varietals caught by our Canadian fishing families.
Pair this with roasted or freshly steamed vegetables and light and fluffy couscous or rice, and this might just be your go-to-mid week marinade! It is also great mixed with a bit of mayonnaise (or an alternative) to make a delicious salmon salad sandwich the next day, or even placed back on the stovetop and reduced further to be used again and again!
Ingredients
For marinade:
- 3/4 cup orange juice
- 3/4 cup natural maple syrup and/or honey
- 1 tbsp Sambal or garlic chili paste
- 1 tbsp miso paste
- salt & pepper to taste
Other ingredients:
- Skipper Otto Salmon - sockeye, pink, chinook, coho
Directions
- Combine all ingredients in a medium saucepan and simmer for at least 5 minutes over low heat. Ensure miso dissolves, that the mix is homogenous, and the sauce thickens.
- Place salmon fillets within 1/2 to 3/4 of the marinade for 1-2 hours or longer. If time doesn't allow, simple pour it over the salmon fillets as a glaze.
- Place marinated salmon fillets in a high-sided baking sheet/ dish lined generously with aluminum foil.
- Bake for 10-15 minutes (depending on size/ amount of fillets), with foil covering the dish.
- For the last 5 minutes, set the oven to broil and remove the top foil. If time allows, baste fillets every few minutes, with remaining marinade
Servings: Varies dependant on size of salmon fillets. Yields almost 2 cups of marinade.
