To celebrate the salmon of our West Coast, we’ve gathered some incredible summer salmon recipes for you to try out in the last weeks of summer and throughout the start of fall. We suggest a few salmon species for every recipe based on taste and texture, but really, any of our salmon will shine in these dishes. Spiced Salmon Kebabs

To get us started we’ve got some incredible salmon kebabs from Epicurious. These are super easy and quick to make, perfect for the BBQ, and would pair well with a Mediterranean mixed green salad for a lovely go-to weekday meal. We recommend trying this recipe out with our chinook salmon, which has a balanced, buttery flavour and sufficient fat content to really complement the delicate spices here.
Grapefruit, Avocado and Salmon Salad

Heart-healthy and simple, this is the perfect lunch when you want something quick and easy without resorting to a frozen pizza or yet another turkey sandwich. Fresh citrusy grapefruit complements the rich fat of the avocados and salmon, and all you need for the dressing is some lime and black pepper! We highly recommend trying this recipe with our sockeye salmon and remember to be careful not to overcook it! In fact, this salad would also be delicious if you kept the sockeye raw (remember, the only fish that is considered safe to eat raw is sushi-grade fish that has been flash-frozen like our salmon) and enjoyed it more like a poke!
Salmon Salad with Sesame Dressing

This recipe from BBC Good Food is the perfect salad for hot summer days spent in the shade of a patio (perhaps paired with a crisp white with citrus?) Prepare this salad when you want to really impress your mother-in-law but don’t want to actually have to put in too much effort! This salad is the perfect place to let our pink salmon shine.
Summer Salmon Salad Sandwiches On Ciabatta

Salmon burgers might get all the glory in the summer, but did you know you can make excellent salmon salad sandwiches with ciabatta as well? These easy sandwiches make excellent school or work lunches (at home or at the office!) to make good use of your salmon leftovers from the night before. Besides a good quality salmon (we recommend pink or coho for its versatility in this one!) high-quality bread is also key – you’re looking for something soft but with a good chewy texture.
Gingered Salmon With Grilled Corn and Watercress

Pickled ginger, salmon and corn come together in this beautiful dish to dance on your tastebuds and begin the transition from summer to fall. Watercress is often overlooked as a green, but it shouldn’t be! It has tonnes of excellent flavour and is fairly inexpensive to boot! Try out this yummy dish with our sockeye salmon for a huge burst of flavour.
