Smoked Sockeye Salmon Sandwich

If you are like us, light and simple recipes are welcomed after such big meals over the holidays! And we couldn't help but notice this delicious smoked sockeye salmon sandwich that was shared on Instagram by one of our members Larry B, using Skipper Otto products.

A self professed 'foodie' who enjoys eating everything he shares (and has the added bonus that his partner just finished culinary school), Larry was happy to share this quick and easy recipe with Skipper Otto members.

Although it calls for hot smoked sockeye salmon strips, you can easily substitute in a can of sockeye salmon or even albacore tuna. Enjoy!

Ingredients

  • 1/2 packaged of Skipper Otto wild hot smoked sockeye salmon strips (or sub canned salmon / tuna)
  • 4-5 pepperoncini peppers
  • 5-6 cornichons 
  • 1/2 tomato
  • 3 tbsp mayonnaise  - or to taste
  • Salt and Pepper  to taste

Directions

  1. Shred salmon into flakes, skin included and place into bowl
  2. Roughly chop pepperoncini and cornichons, and then dice tomato and add all to bowl
  3. Add mayonnaise and mix well
  4. Season with salt and pepper to taste.

To plate:

  1. Make toast, grab a wrap or sliced bread for a sandwich, and add mixture. 
  2. Pair with a salad or eat as is, and enjoy!
