Seared Albacore Tuna

Our albacore tuna is troll-caught off the west coast of British Columbia, and flash-frozen at sea to maintain utmost freshness!

Ingredients
  • 1 lb albacore tuna loin
  • 4-6 tbsp sesame seeds (not toasted)
  • 2 tbsp oil (canola)
  • salt & pepper
Dressing
  • 1 1/2 tbsp soy sauce
  • 1 tbsp runny honey
  • 1/2 tbsp grated ginger
  • 2 tbsp mirin
  • 1/2 tbsp rice wine vinegar
  • 1/2 tbsp lime juice
  • 1 green onion, sliced
Method
  1. Slice the tuna in half. Put sesame seeds on a plate, roll the tuna in seeds to cover.
  2. Place a frying pan on a med-high heat & add the oil.
  3. Place the fish in the hot pan, laying the fish down away from you using tongs. Do not crowd the pan.
  4. Sear each side for 20-30 seconds. The seeds will turn golden brown when ready. Rest tuna for 5 minutes.
  5. Take a sharp knife and slice into rounds.
  6. Plate the tuna, top with dressing, and sprinkle with green onion.
