Featuring crispy panko-coated pike fillets, cucumber, pickled red onions, and a herby homemade tzatziki sauce, these fish burgers are perfect for a laid-back dinner with family. We chose our skinless Northern pike fillets because of their firmer texture and size, but you could easily recreate this recipe using your favourite white fish. We know this is a recipe the whole family will love!

Ingredients
- 1/2 cup plain flour
- 1 egg, beaten lightly
- 1 cup panko breadcrumbs
- 1 tsp paprika
- ½ tsp onion powder
- Salt & pepper
- 2 skinless pike fillets
- 2 tbsp avocado oil
- 1 cucumber, ribboned
- Pickled red onions
- 2 burger buns or bread rolls
- lemon wedges, to serve (optional)
Zucchini Tzatziki:
- ½ medium zucchini, grated coarsely
- ⅓ cup Greek yoghurt
- ½ tbsp lemon juice
- 1 clove garlic, crushed
- 1 tbsp finely chopped fresh mint
- 2 tbsp chopped fresh dill
Directions
- In a shallow bowl, mix flour, paprika, onion powder, salt and pepper. Then, in separate bowls, place your egg and breadcrumbs. Add one piece of fish to the flour and shake away the excess. Dip in the egg, then pat in breadcrumbs, pressing to coat well. Transfer to a plate. Repeat with remaining fish, flour, egg and breadcrumbs. Set aside while you prepare the sauce.
- Make the zucchini tzatziki by combining all ingredients in a small bowl. Taste and adjust seasoning as necessary.
- Place a frying pan on medium-high heat and add the avocado oil. Once hot, add your breaded fillets and cook for approximately 4 minutes on one side. Turn and cook for a further 3 minutes or until golden and the fillet is cooked through. Remove from the pan.
- Prepare your burger by smearing a small amount of tzatziki on the bottom of the bun, then place your fillet, ribbons of cucumber, red onions, and finally another dollop of tzatziki. Serve and enjoy.
Notes
- We chose our skinless Northern pike fillets because of their firmer texture and size, but you could easily recreate this recipe using your favourite white fish, whether it be lingcod, halibut, or rockfish.
- If you don't feel like making your own tzatziki, opt for a store-bought version!
