Pesce Crudo With Sablefish

by Allison HepworthPesce Crudo is the Italian version of ceviche, and it makes for the perfect summertime appetizer with minimal effort and no cooking.
This version uses our Skipper Otto sablefish, but you can substitute ling cod cheeks or any other white fish we carry. As our sablefish is flash frozen it is considered sushi/sashimi grade, so it can be served without cooking it.
This recipe is garnished with cherry tomatoes, shallots, fresh oregano, lump caviar, radishes and dried edible flowers but use whatever you have on hand or is easily found at the grocery store, farmer's market or your own garden!
Ingredients
Crudo:
- One 8 oz (250 gram) Skipper Otto Sablefish fillet, defrosted, skin removed and thinly sliced.
- 2 tbsp extra virgin olive oil
- 1 lemon, juice and zest
- Pinch sea salt
Garnish:
- 6 cherry tomatoes cut in half
- ½ shallot thinly sliced
- 1 radish thinly sliced
- Fresh oregano
- Fresh or dried edible flowers
- Lump caviar / roe (optional and not OceanWise certified)
Directions
- Combine olive oil, lemon juice, zest and salt and mix well.
- To plate: layout the sliced fish on a serving plater. Add the garnish and drizzle the oil/lemon sauce over top.
