One of the things I find most inspiring about my work at Skipper Otto is our community of people who band together to make amazing things happen! There’s a growing wait list of folks in Victoria who’ve been eager to get Skipper Otto seafood in their city. I told them that, as with all our locations, we simply needed to meet a values-aligned store willing to become our Community Partner. Then, we’d be able to provide amazing seafood to families in Victoria. And, once again, our community came through with an introduction to the fantastic folk at Red Barn Markets! Now, to be completely honest, one of the reasons we’re so excited about our partnership with the Red Barn Market is their bacon! It’s famous on Vancouver Island and well worth the ferry trip over if you haven’t yet tried it!
To celebrate our new partnership, we’re sharing a recipe from one of our member’s that combines our favourite Skipper Otto Salmon with Red Barn’s famous bacon, fresh basil and sourdough crust.

Christine’s Salmon with Basil, Bacon & Sourdough Crust
This is a recipe submitted by on of our members, Christine McConkey.
- 4 x 175 gm Skipper Otto salmon fillets or whole side
- 1/2 c sourdough bread crumbs
- 2 tbs chopped basil
- 1 tbsp chopped parsley
- 3 slices bacon chopped
- 2 tbsp olive oil
- Salt and pepper to taste
Combine all ingredients (except the salmon!) in a bowl. Spoon mixture on top of salmon and press down. Cook salmon at 450° on the middle oven rack for 5 minutes, then move to top rack for an additional 5-8 minutes.
Serve with new potatoes and green beans.
