Looking for the perfect excuse to pull out the smoker? This delicious smoked salmon recipe is it!

One of our members recently borrowed the smoker to make this scrumptious recipe (thanks for sharing!). Marinaded in a mix of wine, soy, water, sugar, salt and spices for 12 hours, the salmon is infused with the perfect balance of sweet and salty. Slow-smoked over hickory chips, we're not exaggerating when we say this candied smoked salmon is to die for.

My Dad's Awesome (Candy) Smoked Salmon Recipe

Ingredients

  • 2 fish ~ filleted
  • 1 cup of wine (white or red either are good)
  • 2 cup soy sauce
  • 1 cup water
  • 1/4 cup brown sugar
  • 1/3 cup coarse salt
  • a little garlic powder
  • a little onion powder
  • a little ground black pepper
  • a dash or so of tabasco or other hot sauce

Directions

  1. Marinate fish for 12 hours.
  2. Take fish out of the marinade. Rinse, then pat dry. Let sit for 1 hour.
  3. Smear with either brown sugar or maple syrup (or both!).
  4. Place on the racks of your smoker and place in the smoker box.
  5. Use 1 heaping, slightly moist pan of hickory chips.
  6. Smoke for 8 -12 hours.
  7. Peel off salmon skin when ready. Vacuum pack for longer storage.
