Using a small portion of potato chips makes this dish seem like a decadent treat while providing great nutrients that improve brain power.
Our lingcod is sustainably caught and selected carefully by our fishermen, who are paid fair wages right here in British Columbia.
Ingredients
Fish
- 2 large lingcod fillets
- 3/4 cup panko bread crumbs
- 3/4 cup salted potato chips
- 2 eggs
- 1 cup flour
- salt & pepper
Tartar Sauce
- 1/4 cup mayo
- 1/4 cup plain yoghurt
- 1 tbsp capers, chopped
- 2 tbsp cornichons, chopped
- 1/2 tbsp lemon juice
- 1 tbsp dill, chopped
Directions
- Preheat oven to 425f.
- Remove skin from lingcod and cut into 1 inch strips.
- On one plate, combine flour, salt & pepper. Crush chips into small pieces and combine with panko bread crumbs on a second plate. Crack the eggs into a shallow bowl and whisk.
- Ready a baking tray lined with parchment paper.
- Dredge each piece of fish, first in the flour, then in the egg mix, and finally in the breadcrumb and chip mix before placing on the baking tray.
- Bake for 10 mins until golden brown.
- Mix the tartar sauce and serve with a lemon wedge.
