Chilli Garlic Spot Prawn Spaghetti

Warm summer nights call for simple, no-fuss dinners featuring delicious seasonal produce!

In this chilli garlic spot prawn spaghetti, we’ve opted for just a few of our favourite ingredients to let our spot prawn tails truly shine. Juicy red cherry tomatoes get blistered in a pan alongside garlic, chilli, and a splash of olive oil, before peeled spot prawn tails are added and gently cooked until tender. The sauce is then tossed with cooked spaghetti and finished with a generous squeeze of lemon and fresh parsley. 

We’re not exaggerating when we say this pasta will be on repeat in our household this summer.

Ingredients

  • 1 6-ounce pack spot prawns, thawed and peeled
  • 200g spaghetti
  • 1 tbsp butter
  • 1 tbsp olive oil
  • 2 cloves garlic, finely chopped
  • 1 small chilli, finely chopped or 1 heaped tsp chilli flakes
  • 1 small punnet of cherry tomatoes
  • ½  lemon, zest and juice
  • A handful of fresh parsley, finely chopped
  • Salt and pepper, to taste

Directions

  1. Take your thawed and peeled spot prawns and slice them into smaller bite-sized pieces (if you’d prefer whole prawns in your pasta, skip this step!). Set aside.
  2. Cook your pasta as per the packet instructions.
  3. While your pasta is cooking, heat your butter and olive oil in a large pan over medium heat. Once hot, add in your cherry tomatoes and cook for approximately 2- 4 minutes until beginning to blister. Add in the garlic and chilli, and cook for another minute or so until fragrant.
  4. Add in your spot prawns and allow to cook for a minute or so (they will cook very quickly!). 
  5. Your spaghetti should now be al dente. Reserve 1 cup of pasta water, then strain. Add your hot spaghetti straight into the pan, along with the lemon zest, juice, parsley, salt and pepper. Add a little drizzle of starchy pasta water as needed to help loosen things up and create a light sauce. 
  6. Serve immediately alongside your favourite green salad and enjoy!
