Servings: 3-4 people

Prep Time: ~5 mins | Cook Time: ~15 mins

Ingredients

Fish:
  • 1 portioned fillet Arctic char, approx. 1 lb
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • ½ tsp salt
  • Generous crack of pepper
Gremolata:
  • 1 orange, zest and juice
  • 1 garlic clove, minced
  • 1 handful flat-leaf parsley, finely chopped
  • ¼ cup extra virgin olive oil
  • Salt & pepper to taste
  •

Directions

  1. Preheat your oven to 400 degrees Fahrenheit.
  2. Lay Arctic char fillet, skin side down, on a lined baking sheet and pat dry with some paper towel.
  3. Drizzle the olive oil over the flesh, then add the garlic powder, salt and pepper. Gently massage into the flesh until evenly distributed.
  4. Place the char in the oven and bake for approximately 10-12 minutes or until the flesh easily flakes with a fork. Cook time can be tailored to your desired level of doneness.
  5. While the char is baking, prepare your gremolata. In a small bowl, combine the parsley, olive oil, garlic, orange zest and a generous squeeze of orange juice. Then, season with salt and pepper to taste.
  6. Once the fish has finished cooking, remove it from the oven and transfer it to a serving plate. Top with a generous helping of orange gremolata, serve with your favourite vegetables and enjoy!
