Asian-Inspired Salmon Bowls

When it comes to easy and nutritious weekday dinners, our Asian-inspired salmon bowl is a winning dish.

Prepared with pieces of air-fried, marinated salmon, cooked rice, edamame, a colourful assortment of vegetables, and a spicy sriracha mayonnaise, this dish hit all the right notes. Packed with protein, fibre and flavour, and it comes together in less than 30 minutes - what could be better!

Ingredients

  • 2 small chum salmon portioned fillets (approx. 1lb), thawed
  • 1 tbsp fresh ginger, grated
  • 3 tbsp soy sauce
  • 1 tbsp honey
  • 1 tsp sesame oil
  • Approximately 1 cup cooked rice
  • 1 cup shelled edamame, thawed & cooked
  • 1 cup shredded red cabbage
  • ½ cucumber, finely sliced
  • 1 small carrot, grated
  • Sesame seeds, for garnish
Sriracha Mayonnaise
  • 4 tbsp mayonnaise
  • 2 tsp sriracha sauce
  • 1 ½ tsp soy sauce

Directions

  1. Using a sharp knife, carefully remove the skin from your chum fillets. Cut the salmon into large cubes, approximately 1 inch.
  2. In a large container, combine the fresh ginger, soy sauce, honey and sesame oil. Add the prepared salmon pieces and toss to coat. Allow the salmon to marinate for at least 10 minutes or for up to a few hours in the fridge.
  3. Preheat your airfyer or oven to 370℉. Brush your air fryer basket with olive oil and add your salmon. Try to arrange the salmon in a single layer, or consider airfrying in batches. 
  4. Airfry for around 6-8 minutes or until golden and cooked through. Flip halfway and drizzle with the leftover marinade.
  5. While the salmon pieces are cooking, combine the ingredients for the sriracha mayo in a small bowl. Set aside.
  6. Assemble your bowls with the cooked rice, edamame, shredded cabbage, cucumber, carrot and salmon bites. Drizzle with a few spoonfuls of sriracha mayo and garnish with sesame seeds. Enjoy!

Notes

  • Don’t have an air fryer? Simply bake your salmon in the oven or pan-fry your pieces!
  • We chose chum salmon in this recipe because of its size and mild flavour, but you could also substitute it for any of our wild salmon fillets.
