Boasting all of the flavours of your classic Waldorf salad but with an added hit of protein (thanks to our canned albacore tuna!), this recipe makes for the perfect weekday meal prep. Not only can it be safely stored in the fridge for lunches throughout the week, but it can be served in so many different ways! Toss with fresh salad greens for a light and refreshing lunch, add the filling to your favourite wrap, or use it to make the ultimate tuna melt.

Ingredients
- 1 can (160g) regular albacore tuna, drained and flaked
- 2 tablespoon mayonnaise
- ½ tsp Dijon mustard
- 1 teaspoon apple cider vinegar
- Chopped fresh parsley
- 1 celery stalk, diced
- 1 small green apple (½ medium apple), diced
- ¼ cup chopped walnuts
- 1 tablespoon dried cranberries, chopped
- Zest of half a lemon
Directions
- Combine all ingredients in a mixing bowl. Mix until evenly distributed.
- Serve on sandwich bread, a wrap or in lettuce cups!
Notes
- This filling also tastes great as a tuna melt! Simply toast on bread with your favourite cheese and enjoy.
