On the hunt for a show-stopping holiday appetizer? Look no further than our festive salmon wreath!

With no cooking required and just a touch of plating finesse, this recipe comes together easily and is guaranteed to wow your friends and family. Simply prepare your ricotta base and toppings, then begin arranging your wreath. The vibrant ribbons of sockeye salmon lox perfectly contrast the colours of the avocado, radish and dill, making for a visual masterpiece!

Servings:  6 - 10 (as an appetizer)

Ingredients

Whipped Lemon Ricotta:

  • 1 tub of fresh milk ricotta
  • 1 small handful fresh dill
  • Juice and zest of 1 lemon
  • ½ teaspoon salt

Garnish:

  • 2 small cucumbers, sliced into thin ribbons
  • 2 radishes, thinly sliced
  • 1 ripe avocado, sliced
  • 1 pack sockeye salmon lox
  • Handful of fresh chives, finely sliced
  • Fresh dill, for garnish
  • 1 tablespoon capers
  • ½ lemon, thin slices (halved)
  • 1 fresh baguette or bagels, sliced

Directions

  1. Add the ricotta, dill, lemon and salt to a food processor. Blend for a minute or two until smooth and whipped in texture. Set aside.
  2. Using a mandolin or vegetable peeler, finely slice the cucumber and radish. Set aside.
  3. Begin to assemble the ingredients into the shape of a wreath. Spread the whipped ricotta into a hollow circular shape on a round flat platter. 
  4. Take three slices at a time, dispersing the avocado at different positions on the ricotta. Carefully roll the ribbons of cucumber and nestle these upright in the ricotta, propping them in and around the avocado. Continue to fill out your wreath using slices of lemon, radish and rolled ribbons of sockeye salmon, until the ricotta mixture is mostly covered.
  5. Garnish with dill fronds, fresh chives, and capers, then serve alongside slices of fresh baguette or your favourite crackers.

Notes

  • This recipe is all about layers, so be patient! The more you add to the wreath, the fuller and more wreath-like it becomes.
