Green Butter Grilled Oysters

It’s not often that we share a new recipe featuring our Pacific oysters (we believe these beauties are perfect just the way they are!). But with the holidays approaching, we couldn’t help but mix things up!

Servings: 10 oysters
Prep Time: ~10 mins | Cook Time: ~5 mins
Ingredients
- 1 pack (10 count) Pacific oysters - thawed, shucked and presented on the half shell
- 1 clove garlic
- 1 small handful flat-leaf parsley and chives, roughly chopped
- 1 lemon, zest only (save wedges for serving)
- 100g salted butter, room temperature
- Grilled baguette (optional), for serving
Directions
- Preheat the oven to broil or the grill on high.
- While the oven or grill is heating, prepare the herb butter. In a food processor, combine the garlic, herbs, and lemon zest, pulsing until finely chopped. Next, add the room temperature butter and blitz until smooth, pausing to scrape down the sides as necessary. Set aside.
- Line an oven-proof dish or cast-iron pan with a layer of coarse salt or scrunched baking paper. Carefully place the oysters in the prepared dish, ensuring all are sturdy and upright.
- Add a spoonful of herb butter to each oyster. Transfer the dish to the oven or grill on high for 2-5 minutes until the butter begins to bubble. Remove and let cool slightly.
- Serve alongside slices of grilled baguette and enjoy!

- This delicious recipe can be made on the grill or by simply using your oven on the broil setting.
