Easy and nutritious meal prep recipes don't get much greater than our sockeye salmon bites with avocado sauce and fresh pineapple salsa.

This quick and versatile recipe begins with our sockeye salmon spoon meat: a fantastic, minimal-waste product made from scooping the high-quality salmon off the bone after filleting. With a texture reminiscent of ground meat, our spoon meat can easily be mixed with your favourite herbs and spices, rolled into balls, and cooked as desired.

In this recipe, we’ve served our sockeye salmon bites atop a vibrant avocado sauce, before sprinkling them with pineapple salsa. We also love using this recipe for summer-inspired salad bowls! Simply pair it with your favourite salad greens and starchy veg.

Ingredients

  • 1 pack sockeye salmon spoon meat (approx. 0.7lb)
  • 1 garlic clove, minced
  • 1 shallot, finely chopped
  • Small handful of fresh herbs, chopped (parsley, dill, cilantro, chives, or mint)
  • 1 egg
  • ¼ cup panko breadcrumbs
  • Zest of 1 lemon
  • ½ tsp salt
  • ½ tsp pepper
Avocado Sauce:
  • 1 ripe avocado
  • ½ lemon, juice
  • 1 handful of fresh cilantro
  • 2 tbsp sour cream, Greek yogurt or mayonnaise
  • Fresh or pickled jalapeño, optional
  • Salt & pepper to taste
Pineapple Salsa:
  • 1 ½ cups of fresh pineapple, diced (approx ½ pineapple)
  • ½ green bell pepper, diced
  • 1 small shallot, diced
  • 1 tbsp fresh cilantro, chopped
  • ½ lime, juice only
  • Salt & pepper to taste

Directions

  1. To a medium mixing bowl, add the salmon bite ingredients. Using a spoon or your hands, mix to combine, ensuring everything is evenly distributed.
  2. Scoop out 2 tbsp of the salmon mixture and use your hands to shape into a ball. Place on a plate, and when all balls are made, place in the fridge for around 10 minutes to set.
  3. While the salmon balls are setting, begin preparing your green sauce. Place all ingredients in a small food processor or blender and blitz until smooth. Taste and adjust seasonings as needed. Add a dash of water if the sauce is too thick.
  4. Next, move on to your pineapple salsa. In a bowl, add your salsa ingredients and stir to combine. Set aside.
  5. Add a generous splash of oil to a frying pan and place it on medium heat. Remove your salmon balls from the fridge, and once the pan is hot, carefully add each ball. Sear on each side for around 2 minutes or until each ball is cooked through. Remove from the pan.
  6. Place a thick smear of green sauce on a serving dish. Arrange your salmon balls on top, then sprinkle over the pineapple salsa. Enjoy as is for a delicious and unique appetizer or serve with rice or salad as a meal.

Notes

  • We decided to use sockeye salmon spoon meat for its vibrant colour, but you could also use any of our other species or blend one of our flash-frozen fillets!
  • Want to keep it simple? Prepare our salmon bites without the sauce or salsa. They taste delicious as is.
