Albacore Tuna & Grapefruit Crudo

Bid farewell to your classic date night sashimi! This fresh and vibrant tuna crudo recipe pairs delicate slices of red grapefruit with raw tuna and capers. A match made in heaven!

Ingredients

  • 1/2 Albacore tuna loin, thawed (see notes)
  • 3 tablespoons olive oil
  • ½ shallot, finely diced
  • 2 tablespoons capers
  • ½ red grapefruit, juice and zest
  • ½ red grapefruit, thinly sliced segments
  • flakey sea salt

Directions

  1. Using a very sharp knife, slice the tuna loin into thin pieces. We suggest working with the fish while it is still slightly frozen and firm to make it easier to slice.
  2. Arrange the fish on a large plate or platter, layering with segments of grapefruit. Drizzle with olive oil then scatter the capers and finely diced shallots overtop. Last, drizzle with a generous squeeze of grapefruit juice, then sprinkle with flakey sea salt and the grapefruit zest. Serve right away.

Notes

  • We recommend placing your tuna in the fridge to thaw the morning before you wish to prepare this recipe. The tuna will still be slightly frozen in the middle, making it easier for you to cut clean, thin slices.
  • Can't find grapefruit? This recipe works beautifully with other bold citrus flavours like blood orange!
