Soy Glazed Sablefish

Sablefish is a really fun species to cook with. The high oil content makes it very hard to overcook, even when exposed to high cooking temperatures like broiling or grilling. The velvety white flesh pairs extremely well with this soy glaze that is salty, savoury, and sweet.

Ingredients

  • 1/2 cup soy sauce
  • 1/3 cup sugar
  • 1/4 cup sake
  • 1 clove garlic, minced
  • 1 teaspoon fresh ginger, minced
  • Juice of 1 whole lemon
  • 1.5-2 lbs sablefish fillets
  • Sliced green onion and sesame seeds, for garnish

Directions

  1. Combine all ingredients except the garlic, ginger, and sablefish.
  2. Bring sauce to a simmer for 10 minutes, add the garlic and ginger, and continue simmering for another 5 minutes, or until it begins to look syrupy (it will continue to thicken as it cools).
  3. Preheat oven to a broil. Place sablefish fillets on a baking sheet lined with a baking mat or aluminum foil.
  4. Reserve 1/4 cup of the sauce for dipping later on, and brush sauce over the fish.
  5. Place the baking sheet 6 inches away from the top of the oven, and broil for about 4 minutes.
  6. Baste with more sauce, and cook for another 3 minutes (add 1-2 minutes more for a very thick piece).
  7. Remove from oven when it starts to flake and garnish with green onion and sesame seeds.
  8. Use reserved sauce for dipping!
