Sesame Crusted Albacore Tuna Loin

Ahi tuna may get all the attention, with it's vibrant red flesh, but we think our locally-caught albacore tuna really gives it a run for its money. Albacore tuna has a firm, meaty texture and a mild flavour that lends itself well to all kinds of pairings and preparations. Plus, it's high in protein, omega-3 fatty acids, and potassium! Skipper Otto albacore tuna is sushi grade, and we think it's especially tasty when just lightly seared on the outside and still rare in the middle. This sesame crusted albacore tuna loin recipe is delicious as a fancy appetizer or as a light meal paired some with rice and a salad.

Sesame Crusted Albacore Tuna Loin

Ingredients

  • ½ cup soy sauce or tamari
  • ¼ cup chopped green onions, plus more for garnish
  • 2 tbsp lemon juice
  • 1 tsp sesame oil
  • 1 tsp grated fresh ginger
  • 1 albacore tuna loin
  • ½ cup sesame seeds (white, black, or mixed)
  • ½ tsp cornstarch

Directions

  • Place tuna in a high-sided baking pan. Combine the soy sauce, green onions, lemon juice, sesame oil, and ginger. Pour over the tuna and allow to marinate for up to 2 hours, turning so all sides of the tuna loin are submerged.
  • Once the tuna is almost done marinating, prepare your grill. You'll want a high temperature for searing the tuna.
  • Place the sesame seeds on a plate or shallow dish. Remove the tuna loin from the marinade, brushing the green onions off and reserving the marinade. Coat the tuna in sesame seeds on all sides, pressing the seeds in so they'll stick.
  • Grill for about 1 minute on each side, carefully rotating the tuna loin on the grill. If you prefer your tuna cooked through, you can grill it for a few minutes longer.
  • While the tuna cooks, pour the marinade into a small saucepan and bring it to a boil. Add the cornstarch, stirring continuously with a whisk, and simmer for 3 to 4 minutes, or until the sauce thickens.
  • To serve, slice the tuna loin on into thin slices. Arrange the slices on a plate, drizzle with sauce, and garnish with green onions.
