This simple vegetable pasta with tender sablefish is the perfect light meal on a warm, sunny day, and is packed with nutritious vegetables.

Sablefish with Vegetable Pasta

The perfect light meal on a warm and sunny day, this recipe is super simple and packed with nutritious vegetables. Our sincere thanks to friend Steve W. who has delivered yet another creative way to add sablefish into your recipe routine!

If you have a fancy spiralizer kitchen gadget at home, you're set! You can also prepare this with a mandolin, a regular old peeler, or just hand cut vegetables to your liking.

Note: Steve shared that for the vegetables he used zucchini and carrots but feel free to use whatever vegetables that you like. He suggests that some great options are yellow zucchini, daikon, butternut squash and parsnips.

Ingredients

  • 2 x 5 oz (150 gram) Skipper Otto Sablefish  - skin off
  • Coarse salt and pepper
  • 1 Tablespoon mayonnaise
  • 2 zucchini
  • 2 carrots
  • 8 (or so) cherry tomatoes - halved
  • 10 (or so) olives - pitted
  • oil & balsamic vinegar
  • Parsley for garnish

Directions

  1. Preheat BBQ grill, or grill pan on stove to medium high heat.
  2. While the grill is preheating cut your vegetables into pasta size using either a spiralizer, mandolin or speed peeler. Or just hand cut vegetables to your liking, then sprinkle a little salt over the vegetables to draw out some of the moisture and to soften them a bit. If we prefer crisper vegetables, skip the salt step.
  3. Rub the fish in a thin coat of mayonnaise and season with salt and pepper.
  4. Spray the grill with oil then place your fish, presentation side down, on to the hot grill. Note: presentation side, is the side of the fish you want facing up.
  5. Cook for about 3 minutes, then reduce the heat to medium low and flip the fish. Cook for another 3 minutes or so until the internal temperature of the fish is 135F/57C or to your liking.
  6. Remove the fish and cover while you dress the vegetable pasta
  7. Add the dressing to the vegetable pasta, toss and add in the tomatoes and olives.

Plating

Place the vegetables in the centre of the plate, and top with the sablefish and garnish with parsley. Enjoy!
