– 3 tbsp fresh dill, chopped
– 1 lemon, sliced in thin circles length wise
– Olive oil
– Salt and pepper
– 1 side of Skipper Otto sockeye salmon fillet
Heat oven to 400 F.
Place fillet on lightly oiled baking sheet. Pat fillet dry gently with paper towel.
Sprinkle with pinch of salt (~1/4-1/2 tsp depending on preference) and fresh ground black pepper and let sit on the counter for 5 minutes.
Lightly drizzle olive oil over fillet (use at most 1 tbsp). Sprinkle fresh dill over the fillet then place lemon slices over the fillet spacing about 1/2 inch apart.
Bake in the oven for 8  or 9 minutes so that fillet is medium to medium well. Press down on lemon slices slightly so juice trickles on the salmon and serve!
