Ingredients

  • 4 x 175 gm salmon fillets or whole side
  • 1/2 c sourdough bread crumbs
  • 2 tbs chopped basil 
  • 1 tbsp chopped parsley 
  • 3 slices bacon chopped
  • 2 tbsp olive oil 
  • Salt and pepper to taste

Directions

Combine all ingredients less salmon in bowl and spoon on top of salmon press down. Cook salmon in 450 oven in middle for 5 minutes then move to top for a further 5-8 minutes. 

Serve with new potatoes and green beans.
