Pink Salmon are a wonderful, abundant, local salmon species that are hailed as a sustainable choice by the David Suzuki Foundation. Traditionally, these gems have been passed over for sockeye and spring, but the time of the pink has come! They are finally getting the respect and attention they deserve, and were honoured with their own festival this summer.

They have a delicate flavour, that makes for phenomenal salmon burgers. Try out the recipe below.

Ingredients:

1 pink filet
2 potatoes
1 large shallot
1 bunch green onion
1/2 cup breadcrumbs
1/4 cup mayo

Directions:

Either bake salmon filet in oven for 10 min at 350°

OR

Steam the salmon over the boiling potatoes

Chop up shallot and green onion
Mash all the ingredients together and form patties
Let chill in the fridge for an hour

Then either BBQ or pan fry, enjoy!
