Ingredients:

2 salmon fillets (whole sides) cut into individual portions
1/2 cup thinly sliced green onion (white and first 2 inches of green only)
3-4 tablespoons of chopped cilantro
Zest of 1 lime
Salt and pepper

Directions:

2-3 hours before cooking, place the salmon, skin side down, in a shallow dish and sprinkle lightly with salt and pepper, lime zest, onion and cilantro.

While the fish is marinating, prepare the salsa, recipe below.

Bake or grill on medium-high heat until cooked to your liking.

Fresh Blueberry Salsa (makes 3 cups salsa)

Ingredients:

4 cups fresh blueberries, washed
1/2 cup thinly sliced green onion (white and first 2 inches of green only)
1/2 cup finely chopped red bell pepper
3 Tbs chopped cilantro
1 Tbs finely chopped jalapeño pepper (optional: if you want the heat)
1/2 teaspoon sambal olek OR 1/2 teaspoon red pepper flakes (optional: if you want the heat)
5 Tbs of lime juice
Zest of 1 lime
1/2 teaspoon salt
1/2 teaspoon ground pepper

Directions:

Coarsely chop blueberries: pulsing the blueberries in a food processor works well as the berries retain some of their shape. Add all other ingredients, and adjust seasoning to taste. Let the salsa sit for an hour or so before serving so that the flavours blend. Serve with the cooked salmon.
